Spinach Salad with Figs, Red Onion, and Goat Cheese (Full of Fiber)

You can substitute dry figs if fresh ones are not available.

Serves 4 (serving size: ¼ recipe)

  • 6 cups flat-leafed baby spinach
  • 1 cup sliced red onion
  • 12 fresh figs, stems removed and halved
  • ¼ cup goat cheese crumbles (or veggie cheese)
  • 2 tablespoons extra-virgin olive oil
  • 6 tablespoons balsamic vinegar
Add spinach to a salad bowl. Top with red onion, figs, and goat cheese crumbles. Mix oil and vinegar, drizzle over salad, and serve.

Servings of fruits and vegetables: 1.5 vegetables, 2.0 fruits
