Serves 4 (serving size: 1 cup)
- 1 bunch of asparagus, cut into 2-inch pieces
- 1 ½ avocados
- ½ small onion, chopped
- 2 teaspoons tomatillo powder
- 3 celery stalks, strings peeled and chopped
- 6 sprigs organic parsley
- Kelp or nori to taste
- 1 tablespoon fresh lime juice
- ½ cup fat-free plain yogurt
- 1 teaspoon sea salt
Bring two cups of water to a boil. Add the asparagus. Cook for 5 minutes. Strain and refresh under cold water. Asparagus should be bright green. Combine all the ingredients and 1 cup of water in a blender and process until creamy. Serve Cold.
